What kind of PDFs does this work best on?
Clean, text-based tables that were exported from software (a quantity schedule, a door or window list, a price breakdown). It reads the real text and its position, then groups it into rows and columns. Scanned pages (images of a table) have no text to read, and tables with lots of merged or nested cells can come out misaligned. For those, export the table from the source program if you can, then run it here.
Can I edit the result?
Yes. You get a real .xlsx file you can open in Excel, Google Sheets, LibreOffice or Numbers and edit like any spreadsheet. Cell positions are a best effort from the page layout, so give the columns a quick check and nudge anything that landed a column off.
